Spicy Sweet Potatoes

sweet potatoesHigh in vitamin A, often on sale, and always reminiscent of Thanksgiving, I love to have sweet potatoes as a side dish. My kids also love this sweet and slightly spicy recipe. I like it because it is less work than sweet potato casserole and easier to eat than a baked sweet potato.

3 large sweet potatoes
2 tablespoons canola or vegetable oil
2 tablespoons brown sugar
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon cayenne pepper

Cut the sweet potatoes into cubes—I like them small, about 1 centimeter—and place in a zip top bag with remaining ingredients. Shake until coated (a good job for kids in the kitchen) and pour into a greased 13x9-inch baking dish. Bake at 400 degrees for about 40 minutes. Serves 6-8, we never have leftovers!
