Indian-Style Cucumber Salad

Indian-style cucumber salad

This simple salad is a great side dish when you’re having something spicy.

1/2 cup plain yogurt
1/2 cup sour cream
1-1/2 cups cucumber, peeled, seeded and diced
1 medium onion, chopped
1 medium tomato, seeded and chopped
fresh cilantro leaves (to taste)

storing cilantroCombine yogurt and sour cream. Stir in cucumber, onion and tomato. If you like cilantro, garnish your salad with a few leaves. Make this salad a couple of hours ahead of time and store it in the refrigerator to let the flavors come together. Serves 4-6.

P.S. I like cilantro, so I want to get my money’s worth! To get the most out of your bunch, make a little cilantro bouquet and trim the ends off the stems. Put it in a cup of water. Place the bouquet in the refrigerator and change the water ever day or two. The cilantro will stay fresh and fragrant for over a week.

    Thanks for this, Leah…since I need to be dairy-free, I will use my grape seed mayo instead of the sour cream and yoghurt. I appreciate your tip on keeping cilantro fresh!
